Preparation / Directions:
* chocolate compound (Peanut Butter, White, Semi or Milk Chocolate Compound)
Melt chocolate compound in a double boiler. DO NOT cook. Remove from heat and add the evaluated milk. Stir vigorously and constantly until WELL blended. Add nuts if so desired and flavoring. Pour into a buttered 8x8" pan. Chill in refrigerator. When well chilled, remove from refrigerator and cut into pieces. Can be placed in lolly pops bags and tied with a bow or curly ribbon for gift-giviing and gift packages.
Variations Using Evaporated Milk or Sweetened Condensed Milk to Make the Fudge:
Maple Walnut Fudge: Melt white chocolate. Add chopped walnuts, maple walnut flavoring.
Peanut Butter Fudge: Melt peanut butter chocolate. Add chopped peanuts.
Rocky Road Fudge: Melt 2 parts semi, milk or white chocolate compound to 1 part peanut butter chocolate compound. Add 2 cups marshmallows. Add chopped nuts if desired.
Christmas Fudge: Melt white chocolate. Add chopped candied red and green cherries.
Almond Fudge: Melt white chocolate. Add slivered almonds and almond flavoring.
Hazelnut Fudge: Melt white, semi or milk chocolate. Add chopped hazelnuts and hazelnut flavoring.
Irish Creme Fudge: Melt white chocolate. Add oil-based green food coloring. Stir until well blended. Add the evaporated milk. Stir until well blended. Add Irish Creme Flavoring and 1-2 cups miniature marshmallows.
Double-Layer Peanut Butter Chocolate Fudge: Make a batch of fudge using peanut butter compound. Pour into a buttered 9 x 9" pan. Set aside. Make a batch of fudge using semi sweet compound. Pour on top of the peanut butter fudge. Place in refrigerator to chill. Cut into pieces.
Vanilla Nut Fudge: Melt white chocolate. Add chopped nuts and vanilla flavoring.
Apricot Nut Fudge: Melt white chocolate. Add chopped hazelnuts and pieces of dried apricots. Add apricot flavoring (optional).
Pineapple Fudge: Melt white chocolate. Add pieces of candied pineapple. Add pineapple flavoring.
NOTE: Sweetened Condensed milk can be used in place of evaporated milk. Add l can of sweetened condensed milk to ONE lb. of chocolate compound.
