Pilafi Me Astakos (Lobster Pilaf)

Ingredients:


1 medium lobster (about 2-3 lbs.)

1 1/4 pounds ripe tomatoes, peeled and trained

1 cup olive oil

1 medium onion

4 cloves garlic, grated

1 1/2 cups white wine

2 Tablespoons chopped parsley

2 cups raw rice

1 Teaspoon salt and pepper to taste

4 Tablespoons butter
 

Preparation / Directions:


Boil the lobster. Remove the meat from the shell and cut into small pieces. Reserve 1 cup of the liquid. Put the tomatoes into a pot. Add the oil, onion and garlic. Cook 2-3 minutes. Add the wine, parsley, salt, pepper and the cup of reserved liquid from the lobster. Add the lobster meat and simmer 2-3 minutes. Cook the rice as directed on package, than add the butter and stir through. Pour the lobster sauce into a mold. Add the rice and pack lightly. Turn out onto a platter. Serve hot.
