Guadalajara Grill Guacamole

Ingredients:


2 medium avocados

1/2 cup tomato -- chopped

2 tablespoons onion -- finely chopped

1 tablespoon serrano or jalapeno -- finely chopped

2 tablespoons olive oil

1/4 cup cilantro -- chopped

1 medium juice of 1/2 lime

1 teaspoon salt and pepper to taste
 

Preparation / Directions:


The VERY BEST guacamole I ever tasted was at the Guadalajara Grill in Old Town San Diego. They make it fresh, right at your table. (I recommend the Haas avocados). Here's their recipe: Slice the avocados in half, remove the pit and scoop out the pulp with a spoon. Add all ingredients and mix gently, crisscrossing two spoons in the bowl. The idea is to leave the avocado in small chunks
