Ingredients:


1/4 cup rum

1 tablespoon shallots -- chopped

4 tablespoons butter or margarine

1 tablespoon parsley -- chopped

2 teaspoons lime juice

1/2 teaspoon Tabasco pepper sauce

4 fillets beef steaks
 

Preparation / Directions:


In saucepan, combine rum and shallots; bring to a boil. Reduce heat; simmer 2 minutes. Stir in butter, parsley, lime juice and Tabasco sauce. Brush steaks with rum butter. Grill or broil steaks 6" from heat. Cook about 8 minutes, turning steak once. Brush with rum butter occasionally. Heat any remaining rum butter to boil and serve with steaks. Serve with additional Tabasco sauce if desired.
