Ingredients:


3 1/8 quarts Oil

3 1/8 quarts Flour

16 2/3 large Onions -- chopped

8 1/3 bunch Green onions -- chopped

4 1/8 bunch To 1 bn clerey -- chopped

8 1/3 large Green pepper -- chopped

2 3/4 tablespoons Chicken stock

8 1/3 pound Stewing hen

8 1/3 pieces Bay leaf

1/4 teaspoon Salt

1/4 teaspoon Pepper

8 1/3 pounds Andouille or smoked sausage

3 1/8 quarts Oil

Preparation / Directions:


Chicken Gumbo File' Almost 1 bottle file' Rice In large gumbo pot, make a roux with oil and flour. Saute onions, green onions, celery, and green pepper in roux. Add stock, hen, bay leaf, salt and pepper and cook. When hen is almost cooked, add andouille. Add file a little at at time. Serve with r
