Shellfish Okra Gumbo

Ingredients:


2/3 cup peanut oil

3 pounds fresh okra

1/3 cup flour

4 cups onion

1 teaspoon tomato paste

2 pounds tiger prawn

1 pint shucked oysters

1 pound crabmeat

1 cup smoked ham

1/2 cup parsley

2 tablespoons garlic

3 pieces bay leaf

1 cup celery

1 teaspoon salt

1/2 teaspoon white pepper
 

Preparation / Directions:


Heat half of oil in a skillet, over a medium flame add okra, heat and stir for 6-8 minutes remove from heat and set aside heat remaining oil in a heavy saucepot, over a medium flame add flour, heat and stir to a rich medium brown color add onions, tomato paste, and water-mix well add remaining ingredients-mix well bring to a boil, reduce heat, and simmer, uncovered, for 60 minutes serve hot, with hot-cooked rice, and tabasco sauce to the side
