Chunky Cherry Nut Ice Cream Sauce

Ingredients:


1/4 cup walnuts -- coarsely chopped

1/2 teaspoon butter or margarine

2 cups bing or queen anne cherries -- chopped

1 teaspoon grated rind -- (zest) of one orange

2 tablespoons cherry brandy -- or orange juice

3 tablespoons cherry juice -- or water

2 teaspoons sugar

1 teaspoon cornstarch
 

Preparation / Directions:


Place walnuts and butter in glass measuring cup. Microwave on High 2 minutes. Stir and set aside. In large batter bowl or measuring bowl, combine remaining ingredients. Microwave on High 3 minutes. Stir well. Microwave on High another 3 minutes. Stir in walnuts. Cool slightly and serve over ice cream or cake. Garnish with a dollop of whipped cream and a fresh long stemmed cherry.
