Eggs Baked In Cream Rice Cheese Nests

Ingredients:


1 1/4 cups water

1/2 teaspoon salt

1/4 cup cream of rice

1/2 cup shredded mild cheddar cheese

4 large eggs
 

Preparation / Directions:


Combine water and salt; bring to a boil. Sprinkle in cream of rice and cook, stirring constantly, for 30 seconds. Remove from heat, cover and let stand 3 minutes. Stir in 1/4 cup of cheese. spoon into 4 buttered custard cups or baking dishes. Break an egg into each cup and sprinkle with remaining cheese. Bake in a preheated 350 degree oven until egg is done as desired, about 15 to 20 minutes. Serve immediately. Makes 4 servings. Notes: Cereal and eggs teamed for a tasty breakfast or brunch dish.
