Red Wine Plum Stew With Spiced Ice Cream

Ingredients:


8 3/4 ounces red plums

13 1/2 ounces red wine

2 3/4 ounces raspberry puree

2 1/2 ounces strawberry puree

3 1/4 ounces sugar

1/4 pieces vanilla bean

1/4 pieces cinnamon stick

1/4 pieces bay leaf

3 pieces peppercorns

4 ounces water

1/4 teaspoons orange zest

1 pint fresh berries
 

Preparation / Directions:


Cook the berry purees, sugar, wine, water and spices together until it boils and then skim. Cook the juice until desired thickness (lightly syrupy). Add the plums to the cooking juice and poach. Let set overnight, well covered.
