Basic Pesto

Ingredients:


2 cups basil leaves (tightly packed)

3 cloves garlic

1/4 cup pine nuts

1/4 cup freshly-grated parmigiano-reggiano

3 tablespoons freshly-grated pecorino

1 cup ligurian olive oil

1 teaspoon salt -- to taste

1 teaspoon freshly-ground black pepper -- to taste
 

Preparation / Directions:


In a food processor pulse basil leaves, garlic, pine nuts and cheeses until blended. With motor running, pour olive oil in a thin stream until incorporated. Season with salt and pepper. Source: MEDITERRANEAN MARIO with Mario Batali From the TV FOOD NETWORK - (Show # ME-1A05)
