Buneulos - (Fried Cheese Balls)

Ingredients:


1 1/4 cups flour

3/4 teaspoon baking powder

1 tablespoon hot paprika

3 large eggs -- separated

1 1/2 cups freshly-crumbled goat cheese sheeps milk cheese -- fontina or cheddar

3 medium scallions -- thinly sliced

3 cups extra-virgin olive oil
 

Preparation / Directions:


Preheat oil to 385 degrees. In a mixing bowl, stir together flour, baking powder, paprika, egg yolks, crumbled cheese and scallions. In a separate bowl, whisk egg whites to form peaks. Fold in cheese mixture, form 1-inch balls with a tablespoon and chill for 10 minutes. Fry until golden brown, about 5 to 6 minutes, and serve hot.
