Marinated Sun-Dried Tomatoes And Olives

Ingredients:


1 jar oil pack sun-dried tomatoes -- undrained (8 oz)

1 can pitted ripe olives -- drained (6 oz)

1/3 cup vinegar

1/4 cup chopped onion

2 teaspoons sugar -- (up to 3 tsp)

1 teaspoon dried oregano

1 jar oil pack sun-dried tomatoes -- undrained (8 oz)

1 can pitted ripe olives -- drained (6 oz)

1/3 cup vinegar

1/4 cup chopped onion

2 teaspoons sugar -- (up to 3 tsp)

1 teaspoon dried oregano
 

Preparation / Directions:


In a 1 quart jar or storage container combine the undrained tomatoes, olives, vinegar, onion, sugar and oregano. Cover and chill thoroughly for at least 4 to 7 days. To serve, drain the olives and tomatoes. Serve with crackers or croustades. Makes 12 to 15 appetizer servings.
