Pasta Primavera

Ingredients:


1 pound rotini -- cooked as directed

1 cup broccoli flowerets

1 cup zucchini -- sliced

1 cup yellow squash -- sliced

10 ounces frozen peas -- thawed and drained

1 cup cherry tomatoes -- if desired

1/2 cup parmesan cheese -- grated

1 cup ranch salad dressing
 

Preparation / Directions:


Cook pasta in a large pot with more water than required on the directions2E About 7-8 minutes before the pasta is ready to be drained, add the broccoli, zucchini and yellow squash. Finish cooking the pasta with the vegetables until everything is tender-crisp. Drain everything well and place it all in a large bowl. Add peas, parmesan cheese and tomatoes (if desired). Toss well with the ranch dressing. Serve warm.
