Patrick Swayze's Penne With Chicken

Ingredients:


3 small shallots; peel -- chop

1 teaspoon vegetable oil

8 ounces chicken breast; cook -- bone, julienne

4 ounces sun-dried tomatoes -- slice

1/2 cup heavy cream

1 pound penne -- cook

1 1/2 teaspoons butter -- or

2 tablespoons vegetable oil

2 tablespoons parmesan -- grate

1 teaspoon fresh basil -- julienne
 

Preparation / Directions:


Sauté‚shallots in oil for 2 minutes or until soft. Add chicken and tomatoes and cook over moderate heat for 5 minutes. Add cream and cook, stirring occasionally, for 5 minutes. Add remaining ingredients and toss to combine. Serve immediately. Source: Patrick Swayze's Mulholland Drive Cafe, NYC
