Preparation / Directions:In a large mortar, place potato, garlic, pepper flakes and saffron and grind to a smooth paste. Add oil, 2 tablespoons at a time, working like a mayonnaise until all the oil is incorporated and sauce is smooth and creamy. Season with salt and pepper and serve in a crock.
