Three Cheese Manicotti

Ingredients:


8 ounces tomato sauce

1 package spaghetti sauce mix

2 cups shredded mozzarella

1 cup cream-style cottage cheese

1/2 cup grated parmesan

2 large eggs -- beaten

1/4 cup snipped parsley

1/2 teaspoon salt

1/8 teaspoon pepper

8 large manicotti shells -- cooked and drained
 

Preparation / Directions:


Blend tomato sauce, spaghetti sauce mix and 1 1/2 cups water. Simmer uncovered 10-12 minutes. Combine 1 cup mozzarella, cottage cheese and parmesan. Add eggs, parsley, salt and pepper. Mix lightly. Stuff manicotti shells with cheese mix, using 1/4 cup for each. Pour 1/2 cup of sauce mix in 12 x 7 1/2 x 2 inch baking dish. Arrange manicotti in dish, pour remaining sauce on top. Sprinkle with remaining mozzarella. Bake uncovered at 350F until bubbly-about 25-30 minutes.
