Zucchini Frittata

Ingredients:


2 cups zucchini -- sliced

1 small onion -- minced

1 tablespoon margarine

1 1/2 teaspoons olive oil

6 large eggs -- beaten

1 tablespoon parsley -- chopped

1 teaspoon ground fennel

1/2 teaspoon ground rosemary

1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons cheddar cheese
 

Preparation / Directions:


In large oven-proof skillet on medium-high heat, cook zucchini and onion in margarine and oil for about 5 minutes, or until tender. Combine eggs and seasonings; pour over vegetables. Cook on medium heat without stirring until bottom of mixture has set but top is still soft. Sprinkle grated cheese on top. Place under preheated broiler about 3 minutes, or until cheese is melted and top is brown.
