Ring Around Salad

Jello salad with peaches and cottage cheese
 

Ingredients:


1 can peach slices

1 package lemon jello

1/8 cup water

1/8 cup fresh or bottled lemon juice

2 cups cottage cheese

1/2 cup whipped cream
 

Preparation / Directions:


Drain syrup from peaches and place in saucepan. Add water to make 1 cup of liquid if necessary. Heat liquid to boiling and dissolve jello in liquid. Blend in 1/8 cup water and 1/8 cup juice. Set aside to cool. Stir in cottage cheese. Fold in whipped cream and peaches. Turn mixture into a ring type mold and refrigerate until set.
