Fireburst Fruit Dessert

Ingredients:


4 medium fresh california nectarines -- up to 6

1 cup fresh cherries -- (optional)

2 packages orange- flavor gelatin

1/8 teaspoon salt

1 1/2 cups boiling water

1 1/2 cups cold water

1 tablespoons flesh lemon or lime juice

1 cup banana -- finely sliced

1/2 cup flaked coconut
 

Preparation / Directions:


1. Slice nectarines to measure 3 to 3 1/2 cups. Arrange 8 slices in bottom of 5 1/2- or 6- cup mold; cut remaining slices crosswise into halves. 2. Pit and halve cherries. 3. Dissolve gelatin and salt in boiling water; stir in cold water and lemon juice. 4. Chill 2/3 mixture until it mounds on spoon; fold in nectarine half-slices and cherry halves. 5. Gently spoon into mold; chill until partially set. 6. Meanwhile, chill remaining gelatin mixture until it mounds on spoon; fold in banana and coconut and turn into mold over first layer. Chill until firm.
