Ingredients:

Preparation / Directions:1) Wash the moss well, soak in cold water overnight
2) Strain and put in a large saucepan with water
3) Simmer on a low heat for 5 hours,
4) As water evaporates add some more to replace
5) Strain sweeten to taste with sugar, add lemon juice and sherry
6) Turn into a mould and leave to set
