Orange Shark Kabobs

Ingredients:


1/2 Cup grated peel of 1/2 fresh orange

1/3 cup fresh squeezed orange juice

1/4 cup corn oil

1/4 cup minced onion

1/4 teaspoon dried rosemary leaves -- crushed

1/4 teaspoon dried thyme leaves -- crushed

1/4 teaspoon salt

1 pound shark or halibut steak or -- cut in 1 inch pieces

1 pound scallops

1 medium orange -- unpeeled and cut in 12 wedges

12 medium fresh mushrooms

3 Cup hot cooked brown rice -- (optional)
 

Preparation / Directions:


1. Combine orange peel and juice, oil, onion, rosemary, thyme and salt in shallow dish. 2. Add fish, marinate 1 hour, stirring occasionally. Or marinate in tightly sealed plastic bag, turning occasionally. 3 Arrange orange wedges, fish and mushrooms alternately on 4 skewers. Place on broiler pan; broil 4 inches from heat 12 to 14 minutes, turning and brushing occasionally with remaining marinade. 4. Serve alone or with hot cooked brown rice.
