Garden Fresh Fish Kabobs

Ingredients:


1 pound cod or haddock fillets cut into 1 inch pieces

1 medium zucchini cut into 1/2 inch pieces

12 medium cherry tomatoes

12 medium fresh mushrooms

1 medium green bell pepper cut into 1 inch pieces

1/2 cup butter or margarine

1/3 cup Watkins Tangy Teriyaki Sauce

2 tablespoons fresh lemon juice

1/2 teaspoon Watkins Ginger
 

Preparation / Directions:


If using a grill, place coals on one side of grill; place aluminum drip pan on opposite side. Alternately thread cod, zucchini, tomatoes, mushrooms and peppers onto skewers. In small saucepan, melt together the butter, Teriyaki Sauce, lemon juice and Ginger; brush over kabobs. Place kabobs over drip pan. Grill or broil, turning and basting with sauce occasionally, until cod flakes easily with fork (10 to 20 minutes). Heat any remaining sauce to boiling and serve with kabobs. Makes 6 servings.
