Lamb Loin Chops With Green Peppercorns

Ingredients:


1 1/2 ounces peanut oil

1 1/2 ounces butter

3 ounces scallions -- finely chopped

8 ounces white wine -- dry

6 ounces cream -- heavy

3 tablespoons green peppercorns -- rinsed

1/8 teaspoon salt -- to taste

1/8 teaspoon mint -- as desired

4 chops loin lamb chops -- 5oz each after trimming
 

Preparation / Directions:


Sear chops on both sids in hot oil and 1/2 ounce butter. Continue to cook over medium heat until medium rare. Remove the chops from pan and keep warm. Pour off fat from the skillet. Add 1 ounce butter and the scallions. Saute briefly and add the white wine. Reduce this mixture until it is almost dry. Add the cream and stir. Boil for aproximately 2 minutes and add any liquid that has accumulated around the chops. Add the peppercorns. Simmer approximately 4 minutes. Garnish with sprig of fresh mint. VARIATION: Add fresh mint to the sauce approximately 2 minutes before the sauce is finished.
