Fruit Omelet Flambe

Ingredients:


---omelet

2 large eggs

2 tablespoons water

1 tablespoons margarine

---filling/topping

1 cup fresh seasonal fruit -- sliced

1 tablespoons confectioners sugar

1/3 cup apricot-flavored brandy -- 70-proof

1/2 cup sour cream

1/2 cup pecans -- (optional), chopped
 

Preparation / Directions:


Prepare 40-SECOND OMELET. Fill the omelet with fruit; fold. Dust top of omelet with confectioners' sugar. Pour brandy over the sugar and carefully ignite immediately. Baste the omelet with brandy while burning until the brandy thickens. Top with sour cream and nuts, if desire
