Armenian Lentil Soup |

Ingredients:
1 Cup onion -- chopped |
1/2 Cup carrots -- sliced |
1/2 Cup celery -- sliced |
3 Cup eggplant -- peeled, cubed |
1 Cup green pepper -- diced |
3 cloves garlic -- minced |
6 Cup chicken stock |
1 1/2 Cup lentils |
1 1/2 Cup tomato -- chopped |
4 ounces apricots,dried -- sliced |
1/4 teaspoon cinnamon |
1/4 teaspoon allspice |
1/4 teaspoon cayenne |
1 tablespoons paprika |
1 1/2 teaspoon salt |
3 tablespoons parsley |
1 tablespoons mint |

Preparation / Directions:
Saute veggies in olive oil. Add the rest, except parsley and
mint. Simmer
until lentils are tender, Add the rest.
Adjust seasonings to your taste.
