Preparation / Directions:
In large saucepan, combine water and lentils. Bring to a boil, then simmer covered 15 minutes or until tender. Drain and rinse with cold water until completely cool. In food processor or blender, process Italian dressing, celery, mustard, lemon juice and pepper. In large salad bowl, toss dressing mixture with lentils, chick peas, red onion, cucumber, carrot and parsley. Garnish, if desired, with additional sliced cucumber and red onion. Makes about 12 side-dish servings. Also terrific with Wish-Bone Robusto Italian or Lite Italian Dressing.
