Polpetta - (Meatballs)

Ingredients:


1 pound ground beef

1/2 pound Ground pork

1 tablespoon parsley -- chopped

1 large egg

1 clove garlic -- minced

1/4 cup Parmesan cheese

1 medium hard roll softened in water

1 teaspoon salt/pepper
 

Preparation / Directions:


Mix all ingredients thoroughly. Shape into small balls about 2" in diameter and drop into simmering tomato sauce. Cook slowly 20-25 minutes, stir carefully. Meatballs should be browned in hot olive oil, then dropped into simmering sauce. Variation: Place meatballs on an oiled broiler pan, turn carefully as they brown.
