Ingredients:


1 1/2 pounds Potatoes -- red or white

1/2 cup Chicken broth

1 tablespoon Lemon juice

2 tablespoons Butter

1/3 cup Chives, fresh -- chopped

1/4 teaspoon Salt

1/4 teaspoon Pepper
 

Preparation / Directions:


Cut potatoes into 1-inch cubes and place in a 4-quart glass measure. Add broth and lemon juice. Cover with vented plastic wrap. Microwave on high 10-12 minutes, or until potatoes are fork tender. Stir midway through cooking. Let potatoes stand five minutes. Drain liquid and toss potatoes with butter, chives, salt and pepper.
