Mushroom-Bread Stuffing

Ingredients:


1/2 cup butter

4 medium green onions and green tops -- chopped

6 slices white bread soaked in milk or water and squeezed dry

1 teaspoon salt

1/4 teaspoon freshly ground pepper

2 tablespoons chopped fresh parsley

3 medium fresh mushrooms -- chopped

1 piece chicken liver -- trimmed and chopped

5 large eggs -- well beaten
 

Preparation / Directions:


In a large skillet over medium heat, melt butter. Add onions and saute until lightly browned (about 6 minutes). Add the remaining ingredients except eggs. Saute about 2 minutes. Add eggs and cook until set but still moist. Remove from heat and let cool.
