Colombo Curry Paste (Martinique)

Ingredients:


1 1/2 tablespoons turmeric

1 1/2 tablespoons coriander seeds

1 1/2 tablespoons black mustard seeds

1 1/2 tablespoons black peppercorns

1 1/2 tablespoons cumin seeds

3 cloves garlic -- peeled and grated

2 medium fresh habanero chilies or

4 medium red jalapeno peppers -- seeds and stems -- removed
 

Preparation / Directions:


Grind together the first 5 ingredients into a coarse powder. Add this powder to the garlic, ginger, and chilies, mix well, and allow to sit for at least 1 hour to blend the flavors. A World of Curries by Dave DeWitt and Arthur Pais ISBN 0-316-18224-9 pg 212
