Bran And Pineapple Muffins

Ingredients:


-----WET MIXTURE-----

2 Cups Whole Bran Cereal

2 Cups Buttermilk

2 large eggs -- slightly beaten

20 ounces Crushed Pineapple

1/2 Cup Melted Butter

-----DRY MIXTURE-----

1 Cup Plain Flour

3/4 Cup Dark Brown Sugar

2 teaspoon Salt

2 teaspoon Baking Soda

1 Cup Toasted Almonds, -- chopped
 

Preparation / Directions:


Combine bran and buttermilk; stand 5 mins to soften. Stir in eggs, undrained pineapple and melted butter. Combine flour, brown sugar, salt, baking soda and nuts. Add dry mix to wet mix and stir until just combined. Spoon into grased muffin pans, bake for 25 mins at 375F. Makes about 24 muffins
