Cranberry Muffins 2

Ingredients:


1 cup unprocessed bran

1 cup whole wheat flour

1/4 cup dark brown sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh cranberries

1/4 cup chopped almonds

2 teaspoons lemon zest

1 cup milk

1/4 cup vegetable oil

2 tablespoons molasses

1 large egg
 

Preparation / Directions:


Preheat oven to 375. Butter a 9-muffin pan. Combine bran, flour, sugar, soda, salt, cranberries, almonds and zest in mixing bowl. Stir to blend. Combine in another bowl milk, oil, molasses and egg. Stir milk mixture into dry mixture just until combined - do not overmix. Fill muffin cups about 2/3 full. Bake 15-20 minutes until risen and lightly browned. Approximately 10-20 minutes.
