Lemon Poppy Seed Muffins

Ingredients:


2 1/2 Cups all-purpose flour

1/2 Cup sugar

2 Tablespoons poppy seed

1 Tablespoon baking powder

1 1/4 Cups skim milk

1/4 Cup Fleishmanns margarine melted

1/4 Cup egg beaters

1 Tablespoon grated lemon peel
 

Preparation / Directions:


In large bowl, combine flour, sugar, poppy seed and baking powder; set aside. In small bowl, combine milk, margarine, eggs beaters and lemon peel. Stir into floour mixture just until moistened. Spoon batter into 12 lightly greased 2-1/2-inch muffin pan cups. Bake at 400 degrees for 20-22 minutes or until lieghtly browned. Serve warm. Makes 1 dozen.
