Molasses Corn Muffins

Ingredients:


1 cup whole wheat flour

1 teaspoon salt

1/2 cup finely ground cornmeal

1/4 cup honey

1/4 cup oil

3 teaspoons baking powder

1/2 cup boiling water

2 tablespoons molasses

3 large eggs -- beaten

1/2 cup grated cheddar cheese
 

Preparation / Directions:


In a large bowl combine dry ingredients. In a spearate bowl, combine boiling water and cornmeal. Mix well. Add eggs, oil and cheese molasses and honey to cornmeal mixture and stir well. Add to flour mixture. Stir as you combine. Spray a 12 cup muffin pan. Spoon 3/4 full. Bake at 400* F for 25 minutes. Cool slightly.
