Pecan Mini-Muffins

Ingredients:


2 large eggs -- beaten

1 cup packed brown sugar

1/3 cup butter -- melted

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon vanilla

3/4 cup pecans -- finely chopped
 

Preparation / Directions:


Combine all ingredients and stir until well mixed. Grease two mini-muffin pans (or line with paper baking cups) and fill three-quarters full. Bake at 350 degress for 12 to 15 minutes. Remove from pan and allow to cool. Note: These muffins taste like a bite of pecan pie.
