Queen Surf Banana Muffins

Ingredients:


2 Cup sugar

1 Cup shortening

6 medium ripe bananas -- mashed

4 large eggs -- well beaten

2 1/2 Cup flour

1 teaspoon salt

2 teaspoon baking soda
 

Preparation / Directions:


Cream sugar and shortening until blended. Add bananas and eggs. Stir dry ingredients together 3 times and blend into batter. Do not over mix. Pour into muffin pans and bake at 350 degrees for 35 minutes.
