Classic Carbonara

Ingredients:


1 cup chicken broth

3/4 cup light cream

2 ounces parmesan cheese

1/4 teaspoon salt

1/8 teaspoon black pepper

2 slices proscuitto

4 slices bacon

1 bunch flat-leaf parsley

1 bunch chopped basil leaves

16 ounces spinach fettuccine
 

Preparation / Directions:


Grate Parmesan cheese into a bowl. Add chicken broth and cream. Stir well. Add salt and pepper to taste. Add spinach fettuccine to pot of boiling water. Cook al dente. Drain. Chop proscuitto and add to bowl of sauce. Stir in crumbled bacon. Add parsley and basil. Toss together well. Put pasta back into pot and pour sauce over all. Turn heat to low and toss until well heated. Turn off heat and cover until ready to serve. Approximately 5-8 minutes.
