Pasta Frittata

Ingredients:


6 large eggs

1/4 cup milk

1 package onion soup mix

1/4 cup grated parmesan cheese

1 tablespoons plus 1 teaspoon olive oil or vegetable oil

1 small zucchini -- diced

2 medium plum tomatoes -- diced

1 cup elbow macaroni -- cooked and drained

2 tablespoons plain dry bread crumbs

1 tablespoons chopped fresh basil or 1/2 teaspoon dried basil leaves -- crushed

1 package prepared marinara sauce -- heated, optional
 

Preparation / Directions:


In medium bowl, beat eggs, milk, Onion Soup Mix and cheese; set aside. In 10-inch nonstick skillet, heat 1 tablespoon oil over medium heat and cook zucchini, stirring, 2 minutes or until tender. Stir in tomatoes and macaroni. Stir in egg mixture; cook uncovered over low heat (do not stir) 5 minutes or until eggs are almost set. Meanwhile, in small bowl, combine bread crumbs, basil and remaining 1 teaspoon oil; sprinkle over egg mixture. Continue cooking 2 minutes or until eggs are set. To serve, cut into wedges.
