Bowties With Fresh Vegetables And Brie

Ingredients:


1/4 teaspoon freshly ground pepper

1 3/4 cups vegetable or chicken broth

6 ounces bowtie noodles (about 3 cups)

1 cup regular or low-fat milk

2 ounces brie cheese rind removed, cut into 1/2-inch pieces -- (about 1/3 cup), at room temperature

4 cloves garlic minced
 

Preparation / Directions:


About 4 cups mixed fresh vegetables such as broccoli flowerets, cut into 1/2-inch pieces; corn; shredded or finely diced carrots; chopped zucchini; olive rounds 3 tablespoons chopped fresh basil or 1 tablespoon dried basil Choose either a 3 to 4-quart ovenproof saucepan or deep glass casserole. If using a saucepan, preheat oven to 400 degrees; if using glass, preheat to 425 degrees. In saucepan or casserole, stir together the vegetables, garlic, pepper, milk, broth and pasta. Bake uncovered for 20 to 40 minutes , stirring every 10 minutes, until pasta is al dente. Remove from oven and let sit uncovered 5 to 10 minutes or until sauce is desired thickness. Stir in brie and serve immediately. If pasta stands longer it will continue to thicken and become sticky. If necessary, thin with additional broth.
