Ingredients:


5 Cloves garlic crushed

28 ounces plum tomatoes roughly chopped, with their juices

3 tablespoons oregano finely chopped fresh

3 tablespoons basil finely chopped fresh

1 tablespoons parsley finely chopped fresh

4 medium habanero peppers fresh (or other) -- cut into quarters

2 tablespoons olive oil

1/4 Teaspoon salt and pepper to taste
 

Preparation / Directions:


In a 2qt sauce pan, heat the oil, then add the peppers and garlic. Allow to turn slightly golden and add the tomato. Simmer for 10 - 15 minutes on low, watching that it doesn't dry out too much. If necessary, add some water or chicken stock. Add the herbs and season to taste. Allow to simmer for 10 - 15 minutes more. Serve hot over your favorite past
