Preparation / Directions:Ricotta and vegetable matchstick pasta. Heat olive oil and saute carrots over medium heat for 5 minutes. Add squash and scallions and saute for 3 more minutes. Cook pasta until al dente. Drain and return to pot. Toss with ricotta cheese, half-and-half mustard and sauteed vegetables. Heat quickly to warm. Serve topped with freshly grated Parmesan.
