Orange Pasta Salad

Ingredients:


5 cups chicken cooked and cubed

12 ounces radiatore cooked and drained

1 1/2 cups celery sliced

1/2 cup green onions sliced

1 cup pineapple tidbits drained

11 ounces mandarin oranges drained

2 medium kiwi fruit peeled and cut into chunks

1 cup mayonnaise

1/3 cup vegetable oil

2 tablespoons cider vinegar

2 tablespoons orange juice concentrate

1 1/2 teaspoons salt

1 teaspoon dry mustard

1 cup slivered almonds -- toasted
 

Preparation / Directions:


1. Cook pasta according to package directions, drain and rinse in cold water.

2. In a large bowl, combine chicken, pasta, celery, onions, pineapple, oranges, and kiwi.

3. In a small bowl, mix the mayonnaise, vegetable oil, vinegar, orange juice, salt, and the mustard. Pour over chicken mixture; toss to coat.

4. Cover and chill for several hours. Toss with almonds just before serving.
