Tri-Colored Rotini Salad

Ingredients:


---SALAD

2 cups cooked tri-colored rotini pasta

1/2 cup halved cherry tomatoes

1/4 cup diced red pepper

1 tablespoons sliced black olives

15 ounces artichoke hearts -- drained and halved

---DRESSING

1/4 cup balsamic vinegar

2 teaspoons olive oil

1 tablespoons dijon mustard

2 teaspoons fresh basil minced

1/8 teaspoon fresh ground pepper -- to taste
 

Preparation / Directions:


Combine all salad ingredients in a large bowl. Whisk together the dressing ingredients. Pour the dressing over the salad and toss to coat well. Serve at room temperature. 6 servings/Serving size: 1/2 cup
