This dessert tastes much the same as Banana Cream Pie. When you have extra ripe bananas, peel, wrap in plastic and freeze; use in this dessert.
For 8 servings you will need:
Cream Puffs:

Preparation:
1. For cream puffs, in saucepan, heat water and butter to boiling. Add flour all at once; beat 2 minutes until very stiff. Remove from heat.
2. Beat in the eggs, one at a time, until dough is smooth. Beat until satinlike.
3. Shape 8 mounds of dough on greased baking sheet.
4. Bake at 375 degrees F for 35 to 40 minutes.
5. Split puffs. Return to oven; turn oven off. Let dry 5 minutes.
6. For filling, beat egg yolks with sugar and salt until pale yellow. Beat in flour and 1/2 cup milk.
7. Heat 1 cup milk to boiling. Whisk a little milk into egg mixture; return to pan. Cook, stirring, until thick.
8. Remove from heat; add vanilla and butter, stirring until butter is melted. Chill.
9. Add mashed bananas. Whip the cream. Fold into the banana cream.
10.For sauce, mix chocolate chips, cream and coffee; stir and heat until smooth.
11.Spoon banana cream into cream puffs. Drizzle mocha-chocolate sauce over cream puffs. Serve.
