Preparation / Directions:
Preheat oven to 400 degrees.
Filling: In a saucepan, combine 2/3 cup sugar and 1 tablespoon cornstarch. Add 1/4 cup water. Stir in 4 cups frozen unsweetened peach slices until thick and bubbly. Reduce heat. Set aside. Keep hot.
Topping: In a bowl, mix together all purpose flour, whole wheat flour, sugar, baking powder and cinnamon. Cut in butter until mix looks like coarse crumbs. In another bowl, combine egg and milk. Add to flour mixture. Stir until moist. Pour filling into an 8 x 8 x 2-inch baking dish. Drop topping into 6 mounds atop filling, leaving the center open. Bake until topping is browned and filling bubbly. Serve warm with ice cream if desired.
