Lemon Fluff Pie

Ingredients:


6 large egg yolks

1 cup sugar

4 1/2 tablespoons lemon juice

1/2 medium grated rind of 1/2 lemon

1/8 teaspoon salt

3 large egg whites

1 crust baked pastry shell

1 recipe meringue
 

Preparation / Directions:


Beat egg yolks until thick; add sugar, lemon juice, rind and salt. Mix well and cook in top of double boiler until mixture coats a spoon. Cool. Beat egg whites until stiff and fold into lemon mixture. Pour into pastry shell, cover with meringue and proceed as directed. Makes 1 9-inch pie.
