California Style Barbecue Pizza

Ingredients:


2 teaspoons olive oil

5 ounces boneless skinless chicken breasts -- cut into 3/4 inch- cubes

1/3 cup hickory smoke barbecue sauce

1 1/4 cups shredded low fat mozzarella cheese

1 package italian cheese bread shell -- (16 ounces)

2 tablespoons thinly sliced green onion tops
 

Preparation / Directions:


Preheat oven to 450 degrees. Heat olive oil in a small skillet over medium-high heat. Saute chicken until barely done, 3 to 5 minutes. Remove from heat and pour off juices. Stir in 1 tablespoon barbecue sauce. Spread remaining barbecue sauce over bread shell. Sprinkle chicken mixture over sauce and sprinkle with green onions. Top with remaining 1/2 cup mozzarella. Place in oven directly on oven rack. Bake for 8 to 10 minutes or until cheese is bubbly and bread shell is crisp.
