Preparation / Directions:To make salsa, mix all salsa ingredients in a medium bowl. Refrigerate until used or up to 8 hours. Trim fat from chops. In a small bowl, mix cumin, salt and pepper. Rub on both sides of chops. Grill or broil 3 to 4-inches from coals or heating element for 3 to 4 minutes per side or until cooked to desired doneness. Serve with salsa.
Prep Time: 20 minutes Cook Time: 6-8 minutes Makes: 4 servings A spicy cumin rub on the pork is balanced by the sweetness of the fruit in the salsa. To save time, use a food processor to coarsely chop the salsa. Serve with green beans and rice or couscous.
