Classic Ham Dinner

Ingredients:


2 slices ham

2 tablespoons unsalted butter

12 whole canned apricots

2 tablespoons apricot jam

2 tablespoons maple syrup

1/2 cup pineapple chunks

2 medium oranges -- juice of

2 tablespoons grated orange peel

2 tablespoons chopped parsley

2 tablespoons sherry
 

Preparation / Directions:


Saute ham in pan in melted butter. Arrange apricots and pineapple chunks around ham slices. Reduce heat to simmer. In a bowl mix together apricot jam, maple syrup, orange juice, orange peel, parsley and sherry. Baste ham slices and fruit with liquid as ham cooks. Cook about 4 minutes on each side. Serve hot. Approximately 5-10 minutes.
