Ingredients:


1/4 cup kosher salt

6 teaspoons liquid smoke

8 pounds pork butt

8 pieces ti leaf

Preparation / Directions:


massage rock salt and liquid smoke into pork butt wrap in ti leaves wrap heavily in aluminum foil roast, covered, @ 500 degrees for 30 minutes roast, covered, @ 325 degrees for 3-1/2 hours shred into bite-size pieces serve with roasting liquid note: banana leaves or taro leaves may be used in place of ti leaves.
